CLASSIC GREEK VEGETABLE SOUP WITH SIMPLE INGREDIENTS
This is a simple Greek vegetable soup made with everyday ingredients. It’s the kind of dish that comes together easily and doesn’t need much to taste good.
There are many versions depending on what you have on hand, but the idea is always the same—fresh vegetables, cooked slowly until everything softens and the flavors come together.
It’s light but still satisfying, and it works just as well as a starter or a full meal.

- In a large pot, place all ingredients except oil and croutons.
- Cover with water and bring to a boil. Lower heat, cover and cook for about 60 minutes. My Greek mom liked to cook this for a while…
- Add oil and cook 15 minutes longer. You get this.
Serve topped with croutons. YUM
