Greek Vegetable Soup

CLASSIC GREEK VEGETABLE SOUP WITH SIMPLE INGREDIENTS

This is a simple Greek vegetable soup made with everyday ingredients. It’s the kind of dish that comes together easily and doesn’t need much to taste good.

There are many versions depending on what you have on hand, but the idea is always the same—fresh vegetables, cooked slowly until everything softens and the flavors come together.

It’s light but still satisfying, and it works just as well as a starter or a full meal.

Greek Vegetable Soup

CLASSIC GREEK VEGETABLE SOUP WITH SIMPLE INGREDIENTS

Ingredients
  

  • 2 large onions cut up
  • 1 bunch celery cut up
  • 5 carrots cut up
  • 4 small zucchini cut up
  • 3 leeks cut up
  • ½ cup frozen Lima beans
  • ½ cup cut up green beans
  • 3 ripe tomatoes
  • 3 Tbsp chopped parsley
  • 1 ½ tsp salt
  • ½ tsp pepper
  • ¼ cup olive oil
  • croutons

Equipment

  • Soup Pot

Method
 

  1. In a large pot, place all ingredients except oil and croutons.
  2. Cover with water and bring to a boil. Lower heat, cover and cook for about 60 minutes. My Greek mom liked to cook this for a while…
  3. Add oil and cook 15 minutes longer. You get this.

Serve topped with croutons. YUM
