Turkish Chicken Saute – Tavuk Sote

I had a refrigerator of produce that needed to be used, and ended up with this. I had a couple of peppers and mushrooms that needed to be used. I already had some chicken I was going to use for another recipe, and plans changed.

My take on this recipe is centered around paprika, which is not traditional. It seems there are many variations on Tavuk Sote. All use chicken, peppers, and tomato in a sauce. Most use garlic and onion. Some use zucchini. Most do not use paprika. Some are more like a stew with much more liquid.

My version is unique. I did not have any garlic on hand. I decided to not use onion to center the flavor on the peppers and paprika.

I quickly browned the chicken. I took it out. I cooked up the mushrooms and peppers quickly. I added tomato and the chicken. I seasoned it up and added just enough water to give it a bit of sauce. The result was amazing.

Here goes.

TAVUK SOTE – SAUTEED CHICKEN WITH PEPPERS
  • 2 lb boneless, skinless chicken, cut in bite size pieces
  • 4 tbsp olive oil
  • 1/2 lb mushrooms
  • 1 red bell pepper, chopped in bite size pieces
  • 1 poblano pepper, chopped in bite size pieces
  • 3 roma tomatoes, diced
  • 2 tbsp tomato paste
  • 2 tbsp smoked paprika
  • 1 tbsp oregano
  • 1 tsp Aleppo pepper
  • 1 tsp chicken base
  • 6 oz water
  • salt and pepper to taste

In a large pan on medium high heat, add some olive oil and heat until shimmering. Add chicken and saute until lightly browned. Take out and set aside.

Add a bit more oil and add mushrooms and saute until they start to brown and be cooked. Add the red and green peppers and saute until they start to soften, 5 minutes or so.

Add the tomato paste and cook for a minute or two. Add tomatoes. Then add the chicken, oregano, Aleppo pepper, and paprika. Add chicken base and just enough water to let all steam together. This will make a thick sauce. Mix and bring to a boil. Lower heat to a simmer, cover and cook for about 7 minutes, or until chicken is done. Season as needed

You can serve this with some rice or just some bread for dipping into the sauce
