Arugula, White Bean, Kalamata, Caper, and Red Onion Salad

Ingredients
  

  • 1 15.5 oz can Cannellini beans
  • 5 oz Arugula
  • 1.2 red onion sliced
  • 15 kalamata olives sliced
  • 3 tbsp capers
  • 4 tbsp shaved parmesan cheese
  • 4 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp dijon mustard
  • salt
  • pepper

Method
 

Combine all
  1. Combine arugula, beans, capers, olives, and parmesan in a bowl
  2. Combine oil, vinegar, and dijon and pout on salad. Add salt and pepper as needed. Toss well.
  3. Sprinkle some more parm on top.
