Tavuk Sote - Turkish Chicken Saute

A quick chicken saute with tomatoes and peppers

Ingredients
  

  • 2 lb boneless, skinless chicken cut in bite size pieces
  • 4 tbsp olive oil
  • 1/2 lb mushrooms
  • 1 red bell pepper chopped in bite size pieces
  • 1 poblano pepper chopped in bite size pieces
  • 3 roma tomatoes diced
  • 2 tbsp tomato paste
  • 2 tbsp smoked paprika
  • 1 tbsp oregano
  • 1 tsp Aleppo pepper
  • 1 tsp chicken base
  • 6 oz water
  • salt
  • pepper

Method
 

  1. In a large pan on medium high heat, add some olive oil and heat until shimmering. Add chicken and saute until lightly browned. Take out and set aside.
    2 lb boneless, skinless chicken, 4 tbsp olive oil, salt, pepper
  2. Add a bit more oil and add mushrooms and saute until they start to brown and be cooked. Add the red and green peppers and saute until they start to soften, 5 minutes or so.
    1/2 lb mushrooms, 1 red bell pepper, 1 poblano pepper
  3. Add the tomato paste and cook for a minute or two. Add tomatoes. Then add the chicken, oregano, Aleppo pepper, and paprika. Add chicken base and just enough water to let all steam together. This will make a thick sauce. Mix and bring to a boil. Lower heat to a simmer, cover and cook for about 7 minutes, or until chicken is done. Season as needed
    3 roma tomatoes, 2 tbsp tomato paste, 2 tbsp smoked paprika, 1 tbsp oregano, 1 tsp Aleppo pepper, 1 tsp chicken base, 6 oz water

Notes

You can serve this with some rice or just some bread for dipping into the sauce
