Veggie Soup

Here’s a “Kinda Greek” veggie soup recipe. It’s super easy and about as healthy as you can get. My mom grew up with this version of veggie soup. A long cook and added olive oil.

  • 2 large onions, cut up
  • 1 bunch celery, cut up
  • 5 carrots, cut up
  • 4 small zucchini, cut up
  • 3 leeks, cut up
  • ½ cup frozen Lima beans
  • ½ cup cut up green beans
  • 3 ripe tomatoes
  • 3 Tbsp chopped parsley
  • 1 ½ tsp salt
  • ½ tsp pepper
  • ¼ cup olive oil
  • croutons

In a large pot, place all ingredients except oil and croutons. 

Cover with water and bring to a boil.  Lower heat, cover and cook for about 60 minutes.  My Greek mom liked to cook this for a while…

Add oil and cook 15 minutes longer.  You get this.

Serve topped with croutons. Da bomb..
