One of the more obscure Greek food items in the US is trahana. One of the oldest ancient grains, trahana is a type of pasta. It is made from a mixture of wheat flour and fermented milk or yogurt. It is dried and then broken into small pieces. It comes in 2 varieties, sour and sweet. The sour one is typically used in soup.
Like I said, it is not common, but you can find it on the internet. The brand I am using today is Vlaha Sour Trahana.
It kind of looks like some kind of granola.
There’s a variety of soups using trahana. Ones with chicken, a lemony broth one, a veggie soup one, and on. This one is a tomato based version. The soup ends up almost a porridge unless you add more liquid. This is super easy to make.
Trahana soup with tomato is a satisfying meal that is perfect for chilly evenings or as a comforting lunch. And it’s a quick meal.






Here’s the recipe
TRAHANA SOUP
- 1 24oz can whole tomatoes
- 1 onion sliced
- 2 stalks celery finely chopped
- 2 cups chicken broth
- 1 cup sour trahana
- 1 cup dry white wine
- 1 bay leaf
- 3 tablespoons olive oil
- salt
- pepper
Combine tomatoes, onion, celery, , wine, chicken broth, and bay leaf in pot. Bring to boil.
Cool, strain, and save liquid.
Return the liquid to the pot, add trahana, and bring up to a slow simmer. cook for about 20-25 minutes, stirring occasionally.
Stir in a bit of olive oil at the end and serve.

It’s hearty.
