ARTICHOKES AND LIMA BEANS COOKED IN OLIVE OIL WITH TOMATO AND HERBS
Jump to RecipeArtichokes are a prized ingredient in Greek cooking. They have been cherished for centuries for their distinct taste. They offer an abundance of health benefits. They are packed with dietary fiber, vitamins, and antioxidants. This is one of those dishes that showed up often in my house growing up, even if I didn’t always appreciate it at the time.
Lima beans and it’s close cousin fava give a generous dose of plant-based protein, fiber, and essential nutrients.
Together, they embody the principles of the Mediterranean diet. This diet is a timeless eating pattern inspired by the coastal regions of Mediterranean countries.
Artichokes with Lima Beans holds a cherished place in Greek cuisine, particularly during fasting periods. During these times, Lathera dishes take center stage. The term “Lathera” refers to “cooking in olive oil” that usually are veggie based, like this one.
Lathera dishes often use more olive oil than people expect. The oil isn’t there just for cooking – it’s what gives the vegetables their richness and helps create a satisfying dish from simple ingredients. In many Greek homes, olive oil is treated as a primary ingredient, not just something added at the end.

Artichokes, with their earthy and slightly sweet flavor, enrich the dish with a delightful tenderness. Lima beans add a creamy texture and a nutty taste. Combined, they create a melody that exemplifies the heartiness and balance of the Mediterranean diet.

The magic of this dish lies in its simplicity. Artichoke, lima, lemon, dill, and olive oil is an ideal combination. And it is very easy to make.

Nice recipe but the Lima Beans need to be cooked with some water before adding them to tha artichokes and the rest of the ingredients.
Thank you. Are you talking about dry lima beans? These beans were frozen and after making this recipe was at the perfect texture. If they were the dry ones, yes for sure.
