Artichokes with Lima Beans

ARTICHOKES AND LIMA BEANS SLOWLY COOKED WITH OLIVE OIL AND HERBS

Ingredients
  

  • 1 lb frozen lima beans
  • 1 lb frozen artichoke hearts
  • 6 green onions chopped
  • 3 tbsp fresh dill
  • 1/2 cup olive oil
  • salt and pepper
  • 2 tbsp lemon juice

  • 1 Sauce pan

Method
 

  1. In a large skillet, sauté onions in oil for a few minutes
    6 green onions chopped, 1/2 cup olive oil
  2. Add lima beans, artichokes, about half the dill, and season with salt and pepper. Add a little bit of water to keep from going dry.
    1 lb frozen lima beans, 1 lb frozen artichoke hearts, 3 tbsp fresh dill, salt and pepper
  3. Cover and simmer for 20 minutes or until tender.
  4. Sprinkle with lemon juice add the rest of the dill and cook for 3 more minutes.
    2 tbsp lemon juice

Notes

Serve warm or at room temp.
