Roasted Sausages and Peppers

Looking for a tasty sausage to cook? If you can find Isernio’s Parsley and Pecorino Chicken Sausage, get them. We discovered these delicious sausages at our local store and couldn’t resist sampling them. After trying them, we were hooked and decided to forget our dinner plans and roast 6 of them with some peppers. The best part? These chicken sausages only have 110 calories each, making them a healthy option for any meal.

When it comes to cooking sausages, grilling is usually my go-to method. However, grilling can be time-consuming and often results in dry, split sausages. On this occasion, I found myself without buns and in need of a quicker solution. Fortunately, I had some bell peppers and onions on hand and decided to roast them up instead. Roasting sausages with peppers and onions is a great way to infuse them with flavor and ensure they stay juicy and tender. So if you’re looking for a hassle-free way to cook sausages, try roasting them with some vegetables for a delicious and satisfying meal.

This delicious combination of juicy sausages and caramelized peppers creates a wonderful depth of flavor that is sure to satisfy your taste buds. So why not give it a try? Let’s do this!

  • 6 Italian Sausages
  • 3 bell peppers cut into 1 inch strips
  • 1 sweet onion thinly sliced
  • garlic clove or two
  • olive oil
  • oregano
  • salt and pepper
  • splash of white wine

Preheat your oven to 350.

Sprinkle peppers onion and garlic in a bowl with oregano, olive oil, and salt and pepper. 

Place peppers, onion, garlic in roasting pan and layer on top the sausages.  This helps the sausages to brown. 

Roast for about an hour turning occasionally. If it’s dry in the last 10 minutes, splash with a small bit of white wine.  

That  adds that little bit of amazing sauce you can sop up with some crusty bread.
