Fasolakia – Greek Braised Green Beans.

Some options to add include a potato, or carrot, or whatever needs to get cooked off in the fridge! There’s a version of this with lamb that I will make later.

The batch I made today included most of the optional herbs I had fresh in the garden. It was the last chance for using mint, so grabbed some of that. The oregano is perfect right now. I grabbed a twig of the Greek oregano. I also grabbed a twig of the Syrian Oregano (Za’atar). and the parsley grew back from the last cutting, so added that too. The dill is done, but would be buried by the other stronger herbs. A bit more herbal than normal, but smells wonderful.

Here’s the recipe.

FASOLAKIA
  • 3/4 cup olive oil
  • 2 large onions, rough chopped
  • 3 cloves garlic, chopped
  • 2 pounds fresh green beans
  • 3 large tomatoes or about 5 romas, rough chopped
  • 1/2 cup parsley, chopped
  • small handful of fresh mint OR
  • sprig or 2 of fresh oregano OR
  • fresh dill
  • salt to taste
  • pinch of sugar

Heat the olive oil in a large skillet or medium pot over medium heat. Cook and stir the onions and garlic in until tender.

Mix the green beans, tomatoes, herbs, salt, and into the skillet. Reduce heat to low, and continue cooking 45 minutes, or until beans are soft. Stir every 15 minutes

Once it’s done, remove it from the heat and let it cool for a few minutes before serving.
